This dish is filled with goodness – the salmon is high in Omega-3, an essential fatty acid which is beneficial for dry, itchy skin, brittle hair and nails and very good for reducing inflammation. The fennel purifies and the thyme is healing.
You’ll need:
1 fillet of fresh Salmon (for 4 people)
1 handful of fresh fennel coarsely chopped or 1 tbsp fennel seeds
1 handful of fresh thyme coarsely chopped
Juice of 1 lemon
Sea salt
Freshly ground pepper
Place salmon fillet in tinfoil and smother with a handful of fresh fennel and thyme. Pour over lemon juice and season with salt and pepper.
Wrap tinfoil tight and place in an oventray. Bake in an 180 Celcius for 15 mins.
Serve with a rocket salad (easy to grow yourself) with a sprinkling of Walnuts which are also high in Omega 3 fatty acids.
